5 ingredient flourless pancakes

These pancakes are bananas. B-A-N-A-N-A-S.

Actually, they are almost literally all bananas. Plus, they are delicious and super quick to whip up.

I was explaining this healthy, flourless pancake recipe one day and had some quizzical looks.

It’s nice and light, and I recommend people give it a go for breakfast, so am posting my take.

I stumbled upon the two ingredient combination of banana and eggs online a little while ago, but I make my pancakes with a couple extra ones.

You can also alter to your preference and dietary requirements…as it stands it can suit gluten free, dairy free and paleo.

My 5 ingredients

  • 1 large ripe banana
  • 2 eggs
  • 1 tablespoon of vanilla protein powder
  • 1/4 teaspoon vanilla essence
  • Handful of blueberries (fresh or frozen)

Extras

  • Butter or oil, for the pan (I use Nuttelex or macadamia oil for my cooking)
  • Cinnamon, choc chips, nuts, or other berries, in place of blueberries and vanilla essence for a flavour boost
  • Honey, maple syrup, jam, extra fruit or any other toppings, to serve

Instructions

  1. Break up the banana into several chunks in a bowl and then mash the banana with a fork until no large lumps remain.
  2. Whisk the eggs together with the vanilla essence and then pour over the banana and mix to combine. The mixture should be more liquid than a regular pancake batter.
  3. Slowly add the one tablespoon of protein powder and blueberries, adding only as you see fit. The consistency of the first two ingredients can differ due to varying sizes of bananas and eggs.
  4. Heat up a frying pan over medium heat, with a little butter or oil to prevent the mixture from sticking. Then drop one to two tablespoons of batter onto the pan. I like making these pikelet size rather than large pancakes, so they are more manageable for flipping and cook through evenly.
  5. Cook until the pikelet/pancakes are golden brown in colour and set throughout. Then, serve plain or with the toppings of your choice – I like a little drizzle of honey over mine.

Voila, simple, quick and healthy 5 ingredient flourless pancakes.
